Tea Time
For the November issue of Wilton Magazine, I penned a piece about the inspiring mother/daughter duo behind a food truck sharing good tea with the good people of the community:
On a road trip through Europe, the Fellows family cooked up an inspired idea: Open a new food truck in Wilton! In short order, creative mother-daughter duo, Wendy and Madison Fellows, have brought that dream to fruition with a tea, espresso and treats café on oh-so-stylish wheels called Bubble and Brew.
“We’re huge foodies and we love cars, tea and baking,” says Wendy. “Bubble and Brew pulls all our passions together to share with others.”
It’s a deliciously global and family-run project. Bubble and Brew offers teas from exotic locales like Nepal, Sri Lanka, and Japan in addition to offering espresso, bubble teas and other delights. Dishes like London’s famous sticky toffee pudding and their Cuban grandmother’s coconut candy inspire their fresh baked buns, cookies and cakes.
Madison’s sisters, Delaney and Kailey, and dad, Greg, pitch in with baking development, barista duties, blogging and happily satisfying customers. They serve from Ruby, a charming, red Citroen fire truck from France that the Fellows’ artfully outfitted. It’s now home to a state of the art, eco-friendly mobile kitchen complete with a hand-fashioned Pavoni espresso machine, freshwater tap, candle powered warmers for glass tea pots and tiled finish outs.
